Sichuan pepper tree
 (Zanthoxylum piperitum)
 Description : Magnificent shrub well known in Asia for its extensive use in cooking and increasingly sought after by chefs around the world. Reaching 3 to 4m in all directions, it is fast growing and its branches are provided with large thorns which give it all its charm. From the same botanical family as citrus fruits, it has very aromatic foliage which can be used in infusions or simply chopped in dishes. But it is above all its numerous berries which make it so successful! Indeed, it is increasingly sought after because of the incredible flavor of its berries, or rather the pericarp (hard envelope surrounding the berry) which offers a strongly aromatic and slightly anesthetic taste on the tongue. It can be used for both savory and sweet dishes (divine in a chocolate mousse).
